While the Chinese restaurant is ubiquitous in nearly every corner of the globe, the nature of the food changes according to local taste, while the restaurant owners change by adapting to local cultural norms. Dr. Jane Kauer, Penn Anthropology Department, an expert on food and culture, presents an episode of this celebrated 2008 series by Canadian writer, director, and producer Cheuk Kwan. A food tasting follows.
